Red potatoes, botanically classified as Solanum tuberosum, is a broad category encompassing many different varieties that belong to the Solanaceae, or nightshade family along with tomatoes, eggplant, and bell peppers. Red potatoes are globally known for holding their shape well when cooked and can be used in a number of culturally diverse recipes. They are also widely popular being both commercially grown and cultivated in home gardens for individual use. Red potatoes are often labeled as “new potatoes,” though this categorization only refers to the Red potatoes that are harvested prematurely and have a small size.
